Triple Smoked Gammon on The Bone

  1. Preheat your oven to 160°
  2. Place your Triple Smoked Gammon joint in an oven tray with a metal rack
  3. Pour water into the tray amd foil the whole thing
  4. Bake in the oven for 2.5hours plus 30 mins per kilo
  5. Once cooked, carefully remove the skin leaving as much of the fat on the ham as possible.
  6. Using a sharp knife, diamond score the fat before rubbing soft brown sugar and honey.
  7. Return Triple Smoked Gammon to the oven, crank the heat up to 220°c  for the honey glaze to cook.
  8. Carve and enjoy!
