Scotch Beef Brisket is a traditional slow-cooking favourite, prized for its rich beef flavour and beautifully tender results when given plenty of time.
Our butchers remove the bone before carefully rolling and hand tying the brisket to create a neat joint that’s ready for slow roasting or pot roasting.
Brisket comes from a hard-working part of the animal and contains natural connective tissue and fat. Rather than being a cut to cook quickly, it rewards patience. Long, gentle cooking allows everything to soften and render, producing succulent beef and wonderfully rich cooking juices.
Serve in generous slices with roast potatoes and gravy, or cook until exceptionally tender for beef that will pull apart with a fork.

Cooking Instructions
Remove the brisket from the fridge approximately 30 minutes before cooking.
Preheat the oven to 160°C conventional / 140°C fan / Gas Mark 3.
Season the joint and place in a deep roasting dish or casserole. Add onions, carrots and herbs if desired, followed by enough beef stock or other cooking liquid to come partway up the joint.
Cover tightly with a lid or foil and cook slowly for approximately 4–5 hours, until the beef is tender.
Check occasionally during cooking and add a little more liquid if required.
For additional colour, remove the lid or foil towards the end of cooking.
Once tender, remove from the oven and allow to rest before removing the string and carving.
Cooking times are a guide. Brisket should ultimately be cooked for tenderness rather than strictly by the clock.
Storage
Keep refrigerated below 5°C. Use by the date shown.
Freezing
Suitable for freezing. Freeze on the day of purchase and use within 3 months. Defrost thoroughly in the fridge before cooking and use within 24 hours. Do not refreeze once defrosted.
