Premium dry-aged Scotch Beef sirloin, expertly boned, rolled and tied by our butchers. Beautifully tender and naturally marbled for an impressive Christmas roast that’s easy to carve.

Weights are approximate. Your order reserves a bird or joint within the weight range you choose, and the final balance is based on the actual weight when you collect.

Our Dry-Aged Scotch Beef Rolled Sirloin is a premium roasting joint, selected for its tenderness, rich flavour and beautiful natural marbling.

The sirloin is carefully matured before being expertly boned, trimmed, rolled and tied by our butchers. This creates an impressive joint that roasts evenly and is exceptionally easy to carve, making it an excellent centrepiece for Christmas lunch.

Sirloin combines the tenderness of one of the prime steak cuts with enough natural fat and marbling to remain succulent during roasting. A superb choice for anyone looking for a luxurious beef centrepiece without the bone.

Cooking Instructions

Remove the beef from the fridge approximately 1 hour before cooking.

Preheat the oven to 220°C / 200°C fan / Gas 7. Season the joint, roast for approximately 20 minutes, then reduce the temperature to 180°C / 160°C fan / Gas 4 and continue cooking until your preferred level of doneness is reached.

For best results use a meat thermometer. As a guide, aim for approximately 52–55°C for medium-rare or 58–60°C for medium before resting. Allow the joint to rest well before carving. Cooking times will vary depending on the size and shape of the joint and individual oven.

Storage

Keep refrigerated below 5°C. Keep refrigerated until required and consume by the use-by date.

Freezing

Suitable for freezing. Freeze on the day of purchase and defrost thoroughly in the fridge before cooking. Once defrosted, do not refreeze.
