A classic Scotch Beef roasting joint, carefully prepared by our butchers and covered with a layer of beef fat to help keep the lean topside succulent during roasting. Full of flavour, easy to carve and ideal for a traditional Christmas roast.

Scotch Beef Topside is a traditional roasting favourite, prized for its lean meat and rich beef flavour. 

Our butchers carefully trim and prepare each joint before covering it with a layer of beef fat and hand tying it ready for roasting. The fat protects the lean topside as it cooks, helping to keep the joint succulent.

Topside is an excellent choice when you want a generous, easy-to-carve beef joint without the higher fat content of rib or sirloin. Roast it to your liking, give it plenty of time to rest and carve into thin slices across the grain.

Ideal for Christmas dinner, Sunday lunch and family gatherings.

Cooking Instructions

Remove the beef from the fridge approximately 30 minutes before cooking.

Preheat the oven to 220°C conventional / 200°C fan / Gas Mark 7.

Season the joint and place it in a roasting tin. Roast for approximately 20 minutes, then reduce the oven temperature to 180°C conventional / 160°C fan / Gas Mark 4 and continue cooking until the beef is cooked to your preference.

Once cooked, remove from the oven and rest loosely covered with foil for at least 15-20 minutes.

After resting, cut and remove the strings and remove the layer of beef fat. Carve the topside into thin slices across the grain and serve.

Cooking times will vary according to the size of the joint and how you prefer your beef cooked.

Storage

Keep refrigerated below 5°C. Keep refrigerated and use by the date shown on the pack.

Freezing

Suitable for freezing. Freeze on the day of purchase and use within 3 months. Defrost thoroughly in the fridge before cooking and use within 24 hours. Do not refreeze once defrosted.
