Pasture-reared Pekin duck from Sladesdown Farm near Ashburton in South Devon, on the edge of Dartmoor. Hatched on the family-run farm, the ducks are reared outdoors with room to roam and graze naturally on wild grasses, vetches and brassicas.

Sladesdown’s ducks are slow-grown for around twice as long as standard commercial ducks, helping them develop excellent size, texture and flavour. They are traditionally dry plucked and carefully prepared before reaching our counter.

Whole duck makes a wonderful centrepiece for a festive meal, with rich, succulent meat and naturally flavourful fat that helps produce beautifully crisp skin when roasted.

Cooking Instructions

Remove the duck from the fridge around 30 minutes before cooking. Remove any giblets from the cavity and pat the skin thoroughly dry.
Prick the skin carefully in the fattier areas, taking care not to pierce the meat. Season well and place the duck breast-side up on a rack inside a deep roasting tin so that the rendered fat can drain away as it cooks.
Roast in a preheated oven at 180°C fan / 200°C conventional. As a guide, allow approximately 40 minutes per kg plus 20 minutes. Carefully drain excess fat from the roasting tin during cooking if necessary.
Once cooked, rest the duck loosely covered for 15–20 minutes before carving. Ensure the thickest part of the bird reaches a safe internal temperature before serving.
Strain and refrigerate the rendered duck fat — it's excellent for roasting potatoes and vegetables.

Storage

Keep refrigerated below 5°C. Keep refrigerated and use by the date shown on the pack.

Freezing

Suitable for freezing. Freeze on the day of purchase and use within 3 months. Defrost thoroughly in the fridge before cooking and use within 24 hours. Do not refreeze once defrosted.
