Our Free Range Lamb Shanks are a traditional slow-cooking cut with wonderfully rich flavour.
Taken from the lower leg, lamb shanks contain plenty of natural connective tissue which gradually breaks down during long, gentle cooking, producing exceptionally tender meat and a beautifully rich cooking liquor.
Supplied as a pair, they’re perfect for braising slowly with red wine, stock and vegetables for an effortless winter meal. A particularly good choice over Christmas and New Year when you want something warming and impressive without preparing a large roasting joint.
Cook them low and slow until the meat is tender enough to pull easily from the bone.

Cooking Instructions
emove the lamb shanks from the fridge around 30 minutes before cooking.
Preheat the oven to 160°C / 140°C fan / Gas 3.
Season the shanks and brown them well in a hot casserole dish. Add your choice of vegetables, herbs and stock or red wine, ensuring there is enough liquid to come roughly halfway up the shanks.
Cover and cook slowly for approximately 3–3½ hours, turning occasionally, until the meat is beautifully tender and pulls easily away from the bone.
Allow to rest briefly before serving. The cooking juices make an excellent base for a rich gravy.
Storage
Keep refrigerated at 0–5°C. Use by date shown on label.
Freezing
Suitable for freezing. Freeze on receipt and use within 3 months. Defrost thoroughly in the fridge before cooking. Do not refreeze once defrosted.
