Cut from a whole Scotch Beef shank, Thor’s Hammer gets its unmistakable appearance from the long exposed bone rising from a substantial piece of beef.

It’s certainly a showstopper, but this is also a cut with serious substance. The shank is a hard-working muscle containing plenty of connective tissue, making it particularly well suited to long, slow cooking. Given enough time, the meat becomes beautifully tender while developing a deep, rich beef flavour.

Our butchers carefully prepare and trim each shank to create its distinctive presentation, leaving the bone exposed and the meat ready for slow roasting or braising.

Bring the whole joint to the table for maximum effect, then pull or carve the tender beef from the bone and serve with its cooking juices or gravy.

Cooking Instructions

Thor's Hammer is best cooked low and slow.

Remove from the fridge around 30–60 minutes before cooking.

Preheat the oven to 160°C conventional / 140°C fan / Gas Mark 3.

Season the beef generously. For additional flavour, brown the meat in a large pan first if practical.

Place in a deep roasting dish or casserole with onions, carrots and your choice of herbs. Add beef stock or another cooking liquid around the joint, without completely covering the meat.

Cover tightly with a lid or foil and cook slowly for approximately 5–6 hours, or until the beef is extremely tender and pulls easily from the bone.

Check periodically during cooking and add a little more liquid if necessary.

For a darker exterior, remove the lid or foil towards the end of cooking.

Allow the beef to rest before serving.

Important: cooking time is a guide. Thor's Hammer should ultimately be cooked for tenderness rather than strictly by the clock.

Storage

Keep refrigerated below 5°C. Use by the date shown.

Freezing

Suitable for freezing. Freeze on the day of purchase and use within 3 months. Defrost thoroughly in the fridge before cooking and use within 24 hours. Do not refreeze once defrosted.
